Apple Ricotta Crepes, from the Bramble House Menu
Jo makes these crepes every Monday morning at the Bramble House B&B. They first appeared in A Merry Bramble Christmas.
Crepes:
- »1 cup flour
- »1 tbsp sugar
- »¼ tsp salt
- »2 eggs
- »1 ½ cups milk
- »1 tsp vanilla
- »1 tbsp melted butter
- »Butter for cooking
- Whisk together flour, sugar and salt, then whisk in the eggs, ½ cup of milk and the vanilla. When that’s smooth add the rest of the milk and the melted butter.
- Brush a 9 inch non-stick pan with butter and heat to medium.
- Add about 3 tbsp of batter and tilt pan to cover pan. Cook for a few minutes, until edges begin to dry and then flip. Second side needs only 30 seconds or so to cook. Remove to a plate and repeat until all batter is gone.
Filling:
- » 3 cups of ricotta cheese
- » 1 Tbsp sugar
- » 1 tsp cinnamon
- » Grated lemon peel
- » 2 peeled and grated apple
- Blend together first 4 ingredients, then stir in apples.
- Place ¼ cup of filling on a crepe and then roll up the crepe and put in a buttered baking dish. Continue until you have used up all the crepes and filling.
- Brush crepes with butter, cover with foil, and bake at 350 for 20 minutes.
- For make ahead, freeze crepes before baking and then bake from frozen for a few minutes extra.
