Fall-Spiced Berry Orange Scones
In the book A Merry Bramble Christmas, Amy decides to hold a festive tea to celebrate the holidays with her guests and her community. Scones are the main feature at the event, and are best served with clotted cream, some berry jam, and, of course, a very good cup of tea.
Preheat your oven to 425 F and prepare a baking sheet with parchment paper
For Scones:
- »3 cup flour
- »1 tbsp sugar
- »1/2 tsp salt
- »1 tbsp baking powder
- »1/3 cup granulated sugar
- »1/4 cup light brown sugar
- »11 teaspoon cinnamon
- »1/2 teaspoon cardamom
- »1/2 cup frozen butter
- »1 large egg
- »3/4 cup heavy cream
- »2 teaspoons vanilla extract
- »1/2 teaspoon orange extract
- »1/2 tablespoon fine orange zest
- »1 1/2 cups fresh or frozen or dried cranberries/blueberries/sour cherries
For Egg Wash:
- »1 large egg
- »1 teaspoon waterFor Glaze
- »1 cup icing sugar
- »2 tablespoons orange juice
- »1/2 tsp vanilla
- »1 teaspoon fine orange zest
- »generous dash of salt
Directions:
1. Whisk together flour, salt, baking powder, granulated sugar, light brown sugar, cinnamon, cardamom.
2. Grate frozen butter and, using a fork, combine with the flour mixtures, as you do when making pastry.
3. In small bowl whisk together egg, heavy cream, vanilla, orange zest and orange extract.
4. Add liquid to flour mixture, gently combining/pressing together with hands. Add berries. Shape the dough into two round discs, about 2 inches tall, pressing together the crumbly bits.
5. Cut each disc into 6 wedges and place them on baking sheets, then brush with egg wash (1 egg and 1 teaspoon of water beaten).
6. Bake for 15 – 18 minutes or light-golden brown.
7. Cool scones for 5 minutes and then glaze.
