Pumpkin Ginger Scones
In the book A Merry Bramble Christmas, Amy decides to hold a festive tea to celebrate the holidays with her guests and her community. Scones are the main feature at the event, and Jo prepares several different kinds. These Pumpkin Ginger Scones are best served with some clotted cream and a very good cup of tea.
Preheat your oven to 425 F and prepare a baking sheet with parchment paper.
For Scones:

- »2 3/4 cup flour
- »1/3 cup sugar
- »3/4 tsp salt
- »1 tbsp baking powder
- »1 1/2 tsp pumpkin pie spice or (1 tsp cinnamon + 1/4 tsp each ginger & nutmeg)
- »1/2 cup cold butter
- »2 large eggs
- »2/3 cup pumpkin puree
- »chopped crystallized ginger for topping
For Glaze:
- »1 cup icing sugar
- »2 tablespoons milk
- »1/2 tsp vanilla
- »generous dash of salt
Directions:
1. Whisk together flour, salt, baking powder, sugar, and spices.
2. Cut cold butter with pastry cutter into flour mixture.
3. In small bowl whisk together eggs and pumpkin puree.
4. Add liquid to flour mixture, gently combining/pressing together with hands. Shape the dough into two round discs, about 2 inches tall.
5. Cut each disc into 6 wedges and place them on baking sheets, then press crystalized ginger pieces onto the tops. Place in freezer for 30 min. before baking.
6. Bake for 15 – 18 minutes or light-golden brown.
7. Cool scones for 5 minutes and then glaze.
