Spinach Tomato and Feta Frittata, From The Bramble House Menu
Frittatas are a weekly menu item at Bramble House B & B. Sometimes Jo prepares omelets, but frittatas are far less fussy—even new owner Amy Arden, who struggled when she first purchased Bramble House, was able to put together a decent frittata. To the basic eggs and cream mixture you can add any combination of flavors, from bacon, to sausage, to mushrooms and spinach.
In Bramble House Christmas, Jo prepared for guests Finn Knightly and Willa Fairchild a “puffy frittata speckled with mushrooms,” while in A Baby At Bramble House, guests Tami, Shari, Mackenzie and Edgar, are served a frittata the morning before they make good on their promise to help co-owner, and new father, Chet Hardwick. Below is a recipe for one of Jo’s favorite combinations.
Preheat oven to 400 F.
- 1. Whisk together 6 eggs and 1/4 cup thick cream, add salt, pepper and chopped fresh dill and parsley to taste.
- 2. Brush a deep dish pie plate with oil. Layer it with two cups of wilted spinach (you can microwave freshly washed and still damp spinach for 45-60 seconds).
- 3. Pour egg mixture over. Sprinkled with a dozen halved cherry tomatoes and ½ cup of feta cheese.
- 4. Bake for 15-20 minutes, until the eggs are no longer runny. Cool for 5 minutes, then slice and serve.
